The no-bake energy bites

These Pumpkin Seed & Almond Energy Bites are made in no time and are super delicious. A great snack for in between or a great substitute when you feel like something sweet. The best thing is you don't have to bake them.



Ingredients

serves 4


Basil-Edamame Spread:

  • 200 g edamame

  • 5 g basil

  • 3 tablespoons fresh lemon juice

  • 1 tablespoon chopped scallions

  • ½ small garlic clove

  • 2 tablespoons olive oil

  • 1 to 3 tablespoons water

  • ½ teaspoon sea salt, more to taste

for the sandwiches:

  • 1 large baguette or 8 slices of bread

  • handful salad greens (or arugula)

  • 2 medium tomatoes, sliced

  • 10 basil leaves

  • 10 jarred artichokes roughly chopped

  • some pine nuts


How to

  • Grind 70g oats and 20g pumpkin seeds in a food processor until powdery. Transfer to medium bowl and set aside.

  • Combine remaining 140g oats, remaining 60g pumpkin seeds, raisins, sunflower seeds and cinnamon in large bowl. Stir in almond butter, maple syrup, barley malt syrup and vanilla until soft dough forms.

  • Moisten hands, and roll dough into small balls. Coat balls in oat-pumpkin seed powder. Place in freezer 20 minutes to set, then serve or store in the fridge.


*quick breakfast tipp: crumble 2-3 energy into a bowl of yogurt and fresh fruits top with a spoon of nut butter. Super quick and healthy breakfast!
